You need to know the truth about food, and why eating the right way can save your life.” Early in his career as a researcher with MIT and Virginia Tech, Dr. Campbell worked to promote better health by eating more meat, milk and eggs — “high-quality animal protein … It was an obvious sequel to my own life on the farm and I was happy to believe that the American diet was the best in the world.” He later was a researcher on a project in the Philippines working with malnourished children. The project became an investigation for Dr. Campbell, as to why so many Filipino children were being diagnosed with liver cancer, predominately an adult disease. The primary goal of the project was to ensure that the children were getting as much protein as possible. “In this project, however, I uncovered a dark secret. Children who ate the highest protein diets were the ones most likely to get liver cancer…” He began to review other reports from around the world that reflected the findings of his research in the Philippines. Although it was “heretical to say that protein wasn’t healthy,” he started an in-depth study into the role of nutrition, especially protein, in the cause of cancer. The research project culminated in a 20-year partnership of Cornell University, Oxford University, and the Chinese Academy of Preventive Medicine, a survey of diseases and lifestyle factors in rural China and Taiwan. More commonly known as the China Study, “this project eventually produced more than 8000 statistically significant associations between various dietary factors and disease.” The findings? “People who ate the most animal-based foods got the most chronic disease … People who ate the most plant-based foods were the healthiest and tended to avoid chronic disease. These results could not be ignored,” said Dr. Campbell. In The China Study, Dr. Campbell details the connection between nutrition and heart disease, diabetes, and cancer, and also its ability to reduce or reverse the risk or effects of these deadly illnesses. The China Study also examines the source of nutritional confusion produced by powerful lobbies, government entities, and irresponsible scientists. The China Study is not a diet book. Watch these films and educate yourself on what the real news is so you can better teach your children. If your kids are out of the house, invite them over so you can watch them together or ask them to please rent these movies and watch them. Make the choice today to start educating yourself better about the foods you eat so you can enjoy a healthier, happier and longer life. This is the time of year when many people will put on unwanted pounds. But it doesn’t have to be that way. What can you do with all the tempting foods that will be around? First, decide that you will enjoy all your holiday favorites. This gives you a feeling of not restricting yourself from all your favorite holiday foods and treats you like. The second thing you need to do is decide that even though you will allow yourself to eat everything that doesn’t mean you have to have overindulge. When I go to a party and see many of the foods I like I serve myself smaller servings than usual. Then if I want to I can go back and get another smaller than usual serving. This tricks me into thinking I had two servings but since they were small I actually had the equivalent of one usual serving. This works for me and may work for you as well. I also think about how uncomfortable I will feel if I overeat and then I will suffer with possibly heartburn, gas, bloating. If it’s in the evening it will interfere with my sleep and I might wake up in the middle of the night with acid reflux and gag and possiblly vomit. That’s not a good feeling and if I think about that it’s usually enough to stop me from overeating and overdrinking. Set a time limit for how late you will eat. If I’m going to an evening party, I want to eat soon and not wait until it gets late. It can get tricky because maybe the food is not ready or no one is eating yet. I might be the one who says something like ” I’m starving. I haven’t eaten all day. Do you mind if I get a little something to eat?” Most hosts will be gracious and say “of course” and what happens next is other people will follow. They were just too embarrased to be the first ones to start eating. You may have some other “trick” that works for you and the important thing is to stick with it. Wanting to make a positive change is always a challenge. Following through is even a bigger one. If you have not made the progress you are looking for, take a serious look at the following reasons: 1) You are not making the right food choices. It’s difficult and I make exceptions to taste many foods I don’t usually eat during the holidays. Who can resist tamales, eggnog, pecan or pumpkin pies? Again the key for me is small portions and taste the many foods I love but don’t eat often. By the way there is a Bakery on Piedras that sells “cocktail” tamales which are excellent and are mini versions of the regular tamales. I love to eat these because they don’t have all the masa that the regular tamales have. Maybe you need to walk for 40 minutes instead of only 20. There ia an enormous amount of information on the web on how to incorporate exercise into your life. No matter your age, health or how busy you are and think you don’t have the time to exercise there is always a way. 3) You have not identified the core reasons for self sabotaging your efforts. There may be something you are not consciously aware of that is keeping you a “victim”. This is an area that could be further explored. Emotions such as anger, depression, happiness, celebrating, getting together with family and friends are reasons why many people overeat. Also there may be other reasons like past failures to lose weight that may make you think “why even try if I always fail”. Do you look in the mirror and see only your faults, flabby arms, “love handle”, double chin etc? Focus on the positive assets you have. Your beautiful eyes, hair, smile, personality or other assets you DO have. 4.) You may have a medical condition such as a slow functioning thyroid gland. I have several suggestions that could help save the lives and health of millions of Americans especially that of our children and future generations. I know that reform needs to happen NOW but if we don’t change the CAUSES of poor health what have we really accomplished? What good will it do if millions of Americans continue with obesity, cancer, heart disease and poor health? Having health insurance is good especially for severe trauma cases or where hospitalization is really necessary. But just because one has health insurance does not mean they are going to be able to go to a doctor and have the cause of their health problems corrected. They will get symptomatic relief with expensive and risky prescription drugs. So was their health problem really corrected? Are they really any healthier? Are we a healthier nation? One suggestion to help eliminate one cause of obesity, poor health, premature deaths, heart disease and cancer is to outlaw ALL YOU CAN EAT BUFFETS. I live in one of the FATTEST cities in America. As a physician for eighteen years, I see the effects that overeating creates. I don’t know if you have “All You Can Eat Buffets” in Washington, but they are commonplace in my city. I have been to them. I have overeaten. I gained sixty pounds. I know firsthand what it’s like to be overweight. I continue to see it everyday in my practice. People with high blood pressure, high cholesterol, diabetes, heartburn, acid reflux, colitis, arthritis, back pains, knee pains allergies and food sensitivities (which are mainly due to all the chemicals, artificial colors flavors enhancers additives etc.). People suffer with these symptoms NOT because they don’t have health insurance. They suffer with these symptoms mainly because they have made poor choices. And they have made poor choices from lack of proper education. Even the United States Department of Agriculture’s Food Pyramid was teaching a diet that was not properly balanced. I continually educate my patients on what a truly healthy and balanced diet is in order to prevent diabetes, colon cancer, breast cancer, heart disease etc. I teach them the importance proper exercise and how to reduce and cope with stress. I teach my patients Baby Steps Back to Health. I teach them to follow the 80/20 rule when it comes to eating. Eighty percent of the time eat healthy and twenty percent of the time indulge a little. For too many years there has been confusion as to what are healthy foods. Special interest groups continue to put profits before the health of our nation. Our history is full of examples; actors portraying doctors were paid to do cigarette commercials stating that smoking was good for the digestion (1950’s), margarine is healthier (1970’s), low fat is better, sugar free is zero calorie and better for you and on and on. According to a recent news report, “the president said health care overhaul is both a moral and economic imperative because of the system’s huge stress on the nation’s financial books. He blamed Washington politics and industry lobbying for past failures, while pledging to put the public’s interest ahead of both this time. Increased coverage, improved services and better control of costs. “I just want to figure out what works,” he said. His advisers say while he hopes for a bipartisan measure, he won’t be deterred by ideological fights or interest group opposition.” Mr. President we need to make the right changes and choices in order to reap good results. I urge you to put special interest groups aside and do what’s right for America. I urge you to really make a change in the health and lives of millions of Americans. I will continue to do all I can to help educate as many people as I possibly can in order that they have the right information in order to make the right choices when it comes to their health, diet and exercise. Here is some information for you to consider: Mr. President, we know how to prevent most cancers. We just need to stress the importance of prevention to the American people. Prevention is NOT early detection. Screening is NOT prevention. Prevention is educating people with the right information from getting cancer in the first place. Look at some of these other studies that have been buried which most people will never see because of a big and powerful special interest group (Dairy Association). A HEALTH HAZARD: Regardless of the fat content, dairy products are a serious health hazard; probably causing more harm than meat because most people believe they are “health foods” and eat them without the slightest precaution. Atherosclerosis: High levels of antibodies to milk proteins are often found in severe atherosclerosis (commonly known as hardening of the arteries leading to strokes and heart attacks) (Annand J Atherosclerosis 59:347, 1986; Muscari A Ann Ital Med Int 7:7, 1992). It is not just the cholesterol and fat in dairy products that damage the arteries, dairy proteins are also involved. Therefore, people looking to prevent heart attacks should avoid the low-fat dairy products, too. Diabetes (Childhood, type I): Cow’s milk proteins can trigger diabetes in experimental animals. Worldwide, the incidence of childhood diabetes is tied directly and strongly with the amount of dairy products consumed by people in various countries (Dahl-Jorgensen K. Diabetes Care 14:1081, 1991). Exclusive breast feeding, which delays exposure to cow’s milk infant formula, reduces the risk of diabetes in children. I wonder if you will even really get to see this letter especially in its entirety.
